Happy Tuesday, Durham. We've hit the quiet pocket of late July — the Bulls are out finishing a road trip, ADF is taking its last laps at Duke, and the heat has settled in like it pays rent. Which makes this the perfect week for the two best food stories of the summer: the cult-favorite bakery pop-up that finally has a front door, and the Korean fine-dining room downtown has been waiting on since spring. Let's get into it.

For a couple of years, one of the surest bets in Durham food wasn't a restaurant at all — it was a pop-up table with a line in front of it. Lutra, Chris McLaurin's bakery project, built a genuine cult following one sweet bun at a time — the kind of following where people planned their Saturday around getting there before the trays emptied.

As of late June, the line finally has a permanent address: the Noell Building at American Tobacco Campus (312 Blackwell St), where Lutra Cafe & Bakery has opened its first brick-and-mortar. The buns that made the name are the obvious move — order more than you think you need; they don't survive the walk to the car — but the case goes deeper now, and there's a proper cafe attached, which means you can actually sit down with a coffee instead of eating over a napkin in the parking lot. Growth looks good on everybody.

The setting doesn't hurt either: a slow morning at ATC — pastry in hand, water tower overhead, the campus still quiet before the lunch crowd — is one of the softest landings a Durham day can have.

Pro tip: treat it like the pop-up taught you — go early. The best things in the case have never once made it to closing time.

M Hansik is open. The Korean fine-dining room at 501 Washington St — the one we've been tracking since spring, and the anchor of the Korean-food boom we wrote about back in May — quietly opened its doors in late June. Downtown now has a proper occasion-dinner Korean option, and early word is the room is as considered as the menu. Go form your own opinion before the reservation books figure it out. The tomato sandwich window is open. Peak NC tomato season is here, which means the correct lunch for the next three weeks costs about $4: white bread, Duke's, a thick slice of something you bought at the market Saturday, salt, and a sink to lean over. Add bacon and it's dinner.

Here's a thing Durham does better than almost anywhere: it shows up for version 1.0. The folding table at the market, the pop-up in somebody else's kitchen, the counter with a handwritten menu — this city treats them like the real thing, because here they are the real thing. And then a couple of years later the folding table has a lease, the pop-up has a front door, and the whole town gets to say we knew them when. Lutra this month.
